Food
When Simon asked for “anything light and delicious,” he didn’t give away much. But after getting to know him, I found out he really loves food with plenty of flavor. I’m glad my dish hit the mark for him.
I always trust my gut feeling when choosing what to cook for guests. Once Simon mentioned wanting something light, fish seemed like the perfect choice. I thought Asian flavors would work well, and I wanted it to look good too. From his social media, I could tell Simon really appreciates good food.
I made crispy skin stone bass on a bed of light, flavorful curry, with crispy shallots and rice on the side. I made my own curry paste because the ones from shops just don’t have enough flavour kick. I used this recipe for inspiration, but as always I added my own twist and changed some ingredients.
